About when were surnames adopted by Jews in Russia? #general

I am helping a friend with his family tree, which on the paternal
side traces back (we think) to the Ukraine.

In addition to the "paper trail", he has tested his Y-DNA and found
another man with a pretty close match, but with a different surname.

I am not familiar with the pattern/time frame of surname adoption in
this region, so if anyone could enlighten me, I would appreciate it.
In Hungary, it was pretty much about 1780, but I suspect that in the
Ukraine, it might have been later?
