When was your grandfather born? Do you have any other KANCHUK names?

If you search on the Jewish Records Indexing - Poland at
<http://www.jewishgen.org/jri-pl/jriplweb.htm> for KANCHUK in
Bialystok Province using the Surnames Daitch-Mokotoff Soundex, you
will find several KANCZUKs/KONCZUKs (Itka, Jankiel [two different
ones], Golda, Enia, Josel, Chackiel, Sora and Izrael) born in
Trzcianne between 1885 and 1894.
