Hi, Avigdor,
Most city directories have two sections. The first is residents, alphabetical by
surname. But the second is businesses, sorted by category, rather like the
"Yellow Pages" here in the US.

You should be able to find some section called, "butchers" or "meat" or some such,
and make photocopies of those pages. If you're lucky, you'll be able to match the
name. If not, you could plot them on a map, see if any are in the area of town
you expect, and thus narrow the list.
