Peter Haas asked about online sites for Jewish Surnames. Ancestry
has put Alexander Beider's book on Russian surnames online; a
similar book for Poland can probably be found in most major
libraries.

Dictionary of Jewish Surnames in Russian Empire [database on-line].
Provo, UT. USA. Original data: Beider, Alexander. A Dictionary of
Jewish Surnames >from the Russian Empire. Teaneck, NJ, USA:
Avotaynu, 1993.
History and etymology of Jewish surnames in Russia and surrounding
areas

But don't neglect the JewishGen Names infofiles (>from home page
click on infofiles, then names) which include:

Jewish Given Names - Slide Presentation
Names of the Jews (Preliminary FAQ)
Bibliography on Jewish Given Names
Jewish Given Names Databases
Alternate Surnames in Russian Poland
