No site gives you everything, so every few years I take out a short subscription to Ancestry and MyHeritage. If you go to a public library you can try Ancestry for free. Ancestry tends to be a bit week on Eastern Europe and often they have only indexes. For Polish records the best site is JRI-Poland and they are slowly adding links to the actual documents. For many places FamilySearch remains the best source, for example, for Hungary, Ancestry gives you some indexed data, but since most records have not been indexed the best way to find information is to look at the digitized original records.
