From the above marriage record, Lazer fits with the father's name Eliezer on the gravestone of Jennie.

As for locating the sister Eve - I've usually tried two approaches when I don't know the married name for a sister, or where she ended up living. The first is finding an obituary for Jennie or for her sister Esther Simon. Those obituaries would include the married sister's name, if she was still living. Even if the sister is mentioned under her husband's name and city (for example, Mrs I. Katz of Philadelphia), that still considerably narrows things down. 

The second is to check out Ancestry.com family trees, to see who includes either Jennie or Esther. The good thing about Ancestry trees is that women are entered with their original surname, not by married surname. Someone out there may know that their great grandmother Eve Resnik had sisters named Jennie and Esther, and so you can find Eve that way.

On her way here to the US, Eve may also have traveled here under the first name Chava.
