There actually are conventions in Yiddish spelling, and rabbis throughout the generations attached great importance to how names were spelled in Ketubot (marriage contracts) and Gittin (divorce documents). Many books have been written on the subject. These works often discuss the etymology of names as well.

It is definitely true, however, that tombstone engravers did not necessarily follow the established conventions.
