There might well be a religious reason for it. It is brought down from Kabbalistic sources that reading the text of matzeivoth, is harmful for one's memory. By writing the name on the other side one can avoid having to read all other Matzeivoth. However, for that reason one often finds the full name, not just the surname, written there.
