In regard to locating information on a particular name such as
BEHRSTOCK and one's who have gone to countries such as Ireland,
there is a free search engine for looking up the 1901 and 1911
Irish Census which is http://www.census.nationalarchives.ie/
However, there are no BEHRSTOCK or MELAMED surnames therein.
Perhaps it was another surname which the cousins used that went
to Ireland.

However, there are loads of Behrstock names in the ships
manifests which one can find on Ancestry.com and findmypast.co.uk.
In addition, the same sources can provide records in the U.S.
Census for Chicago and Los Angeles.

Also, you can look up family trees in Ancestry.com, GENI,
MyHeritage and other such genealogical databases.

There appears to be several BEHRSTOCK individuals who were
siblings who came to America according the Find A Grave database:
