Cattlemen aboard ship? #general

My grandmother immigrated to America aboard the Lake Ontario which left
Liverpool for St John, New Brunswick on March 27, 1897.

The last page of the ship's manifest shows a list of first initials, last
names, and ages labeled "List of Cattlemen per Lake Ontario".

Does anyone know why this ship would have carry cattlemen as well as
immigrants?

After the Civil War cattle raising boomed in the American West. Europe
became a lucrative market for beef. Before the widespread use of
refrigeration live cattle had to be transported to Atlantic ports and
then shipped to Europe. Cattlemen had to accompany the herds. After
delivering their cargo the cattlemen returned to the U.S. on passenger
ships.

If you go to the website of the Immigrant Ships Transcribers Guild
(ISTG) and do an ISTG search for "Cattlemen" you will see many examples.
