The Paris Archives website is excellent and not too difficult to navigate even if you don’t speak French (use an automatic translation tool). Not only are there the civil birth, marriage and death records (no separation of religions), but also census records up to 1936 and cemetery and burial records up to 1970. If you don’t know exactly when or where in Paris the event took place, use the decennial and annual tables. Documents are organized by arrondissement (neighborhood). So you’ll need to do some scrolling to find what you want, but it’s worth the effort. I have only a few words of French learned in high school but was able to find quite a number of documents for my family:

I wish to thank all who answered my request.
The original death and burial records of the Paris archives are indeed exactly what I was looking for.  Once you learn the way the information is recorded and stored (very quickly) it is easy to navigate and find what you want.  Even though I know a little French, I found that not knowing French isn't an obstacle for a successful search.
