Preserving Indian Jewish Cooking #general
Laurie Sosna
Here's an article/interview with Esther David, the author of "Bene Appetit: The Cuisine of Indian Jews"
She has some very interesting insights into the Jewish community in India, as well as the culinary challenges they face.

(It makes me happy to know that the book itself is available through Kitchen Arts & Letters, an independent bookseller. It's printed in India and is currently backordered, hopefully due to high demand)

Since so many Indians are vegetarian, I wonder what the main impediment would be, other than buying kosher meat, a problem easily and healthily solved by eating a vegetarian diet. My daughter-in-law is a Hindu Indian and I've learned a lot about Indian food from her and her mother. It's delicious and so easy when one doesn't base a meal on meat.
